The Knox Family Farm – 6/19/16 – Mable, Minnesota
I never thought I would say this, but I love the farm life! My husband’s family farm is one of my favorite places to visit in the summer. His father, Jerry, grew up on this lovely piece of land in Mable, Minnesota and I have heard stories of the hard work that goes into maintaining this beautiful property. The family does not grow their own crops anymore, but does do the mowing and plants their own pumpkins.
The first time I came here, I was worried about not having cell phone service, but I think now this is my favorite part about going 2.5 hours South. There’s nothing to do but enjoy the present moment. We get to grill, build fires, watch the sunset from the hammock, and this last trip I even got to drive the tractor- I will post a video of my rookie attempt on Facebook one of these days…it was so fun, but a little scary!
There are a couple of really cute towns nearby. We frequent Lanesboro and tube down the Root River, and one time we stopped in Spring Grove for lunch. I ordered a salad and they literally brought out a plate of shredded lettuce and a side of thousand island dressing, it was pretty awesome. I hope to have more photos and blog posts about this place, it is pretty magical.
